Tuna, Rice and Tzatziki Lunchbox Salad

Ingredients
- 25g/1oz brown rice
- 1 (100g) can tuna in spring water, drained
- 75g/3oz cherry tomatoes, halved
- 3 tbsp of fresh tzatziki dip plus more to serve
- herb salad leaves
Method
- Cook the rice in boiling salted water for 15mins or until just tender. Drain, rinse until cold then drain again. Empty the rice into a bowl, add the tuna, tomatoes and tzatziki and mix well.
- Place a layer of herb salad into the base of a sealable container, top with the salad mixture and seal. Chill until required. Top with more tzatziki to serve.
