Griddled Prawns with Guacamole

Ingredients

  • 12 large shell-on raw prawns
  • 1 tbsp olive oil
  • juice half a lemon
  • salt and freshly ground black pepper
  • 1 (200g) pot of fresh guacamole dip
  • to serve: lemon and lime wedges and crusty bread

Method

  1. Place the prawns in a shallow dish, add the olive oil and lemon juice and toss together. Season with a little salt and ground black pepper.
  2. Heat a griddle pan or barbecue and when hot add the prawns. Cook for 8-10mins, turning once until the prawns have turned bright pink and are lightly charred around the edges.
  3. Heap the prawns onto a platter and serve with the guacamole, lemon and lime wedges and some crusty bread to serve.
