Spicy Sausage Rice

Ingredients

  • 1 onion, chopped
  • 1 red pepper, diced
  • 1 tbsp olive oil
  • 225g wild or basmati rice
  • 450ml stock
  • 6 cooked sausages, sliced
  • 1 (200g) pot of fresh salsa dip

Method

  1. Sauté the onion and pepper in the oil until tender. Stir in the rice and stock, cover and simmer for 20mins until the rice is tender.
  2. Stir in the sausages and sauce and simmer uncovered over a medium heat for a further 5mins or until hot. Add the chopped parsley and serve in bowls.
