Spicy Sausage Rice

Ingredients
- 1 onion, chopped
- 1 red pepper, diced
- 1 tbsp olive oil
- 225g wild or basmati rice
- 450ml stock
- 6 cooked sausages, sliced
- 1 (200g) pot of fresh salsa dip
Method
- Sauté the onion and pepper in the oil until tender. Stir in the rice and stock, cover and simmer for 20mins until the rice is tender.
- Stir in the sausages and sauce and simmer uncovered over a medium heat for a further 5mins or until hot. Add the chopped parsley and serve in bowls.
